There’s a story behind this powerful antibacterial honey, one that the Greeks have known about since ancient times - that it is a very antibacterial honey.  What isn't generally known is that there are many different varieties of the Oak tree.  Each jar in this set is from a different variety of Oak.

Thomas's Raw Organic Greek Mountain (Greek) Oak Honey-1kg/Active 20.5:
Super Active 20.5 Active Raw Organic Mountain Oak honey, very thick and sits solidly on the tongue, taking a moment to melt away. This Mountain Oak comes from a forest that grows on a mountain by a lake that is close to a place called Rentina. 

Flavour: Enjoy the rich, mineral-like treacle flavour with undertones of cooked apples and plums. Its fleeting aftertaste carries a hint of sourness, while its aroma evokes cold spiced fruit sauces.

Giorgio's Raw Greek Organic (Hungarian) Oak Honey-1kg/Active 19.5:
Silver Award Winner in the 2023 Mediterranean Taste Awards
This Active 19.5 Organic Oak comes from the bees of Giorgios. They collect the rich antibacterial sap from the Oak trees on Mount Othyrs, Greece. Lab tested with an antibacterial level of 19.5. Extremely potent! 

Flavour: When we first sampled this honey we knew it tasted very good. This honey is a wonderfully deep and rich tasting honey; it has a fruitiness as well as a deep woody flavour.

Antonio's Raw Organic (Pyrenean) Oak Honey-1kg/Active 17:
Platinum award winner Great Taste Awards 2022. This variety of Oak honey comes from Oaks growing at the Sierra del Rincon UNESCO Biosphere Reserve, where no chemical treatments are allowed. The trees grow at around 1100 metres in an extremely wild and untouched place.

Flavour: Antonio's Raw Oak Honey is a unique type amongst the tree varieties. It has a deep earthy taste with lots of malt and a touch of smokiness - quite savoury and not as sweet as other varieties.

Kostas' Organic Greek Mediterranean (Holm) Oak - 1kg/Active 25:
This is a fantastic batch of Mediterranean (Holm) Oak from beekeeper Kostas. The highest rating in the set! 

Flavour: This honey features a caramel sweetness, enriched with fruity undertones and the classic treacly taste typical of tree honey. Notes of stewed plums enhance its complex flavour palette.

What does "Active" mean in the product title?  We send some of our honeys to a lab for a "Total Activity test". This test measures the total antimicrobial activity of a honey. This is done by testing a solution of a honey on a lab plate against the Staph Aureus bacteria. the honey is graded according to the amount of bacteria that the honey solution kills. Generally, the range that we see will be between 10 and 25 plus. This type of test is similar to the test used to grade Manuka Honey.  The main antibacterial activity is caused by a bee enzyme that creates hydrogen peroxide in the honey. Please bear in mind that the Activity Level is at its highest when we test it and will decrease over time. This will happen faster if the honey is exposed to light and heat. Storing the honey in a dark cool place will help to slow down the rate at which the Activity Level decreases.

Plant/tree - There are actually many Oak tree varieties, each of which produces a different kind of Oak honey.   In this set there is the Holm Oak (also known as the Mediterranean Oak) which is evergreen, Kostas' Active 24 honey comes from this tree. There is the Greek Oak (Quercus graeca), which Thomas' Mountain Oak honey comes from.  Giorgios' Oak comes from the Hungarian Oak (Quercus frainetto). Finally, Antonio's Oak comes from the Pyrenean Oak (Quercus pyrenaica). 

Oak honey generally comes from a sweet fluid that weeps from the acorns, which the bees collect. Some Oak honey also comes via aphids feeding on the tree sap, which the bees collect off the leaves and branches.

Colour - Oak honey is one of the darkest honeys, ranging from brown through to appearing almost black when jarred.  

Common Uses  Oak honey is great for cheese pairing. Its strong flavor complements the richness of various cheeses. Drizzle it over blue cheese, goat cheese, or aged hard cheeses like Parmesan for a wonderful contrast of flavours.

Why Raw Honey is different to Processed Honey - Raw honey generally means the honey has not been processed, it has come from the hive to the jar with minimal interference. Most supermarket honey is highly processed to make it look more attractive, it has been drained of pollen, often heated and blended. Raw honey tends to vary from batch to batch, this is because it is not processed in a factory, filtered or heated to look homogeneous, it changes with the season and climate and what the bees feed on, we will update this fact sheet according to which batch we currently have in.

Crystallisation:-  Please know that raw honey does crystallise and is a natural process of raw honey (therefore we cannot except returns on honey that may have crystallised). We only supply raw honey because we believe this is how all honey should be.  If you don't want your honey to crystallise then raw honey probably isn't for you.
